2 Gluten Free Cake Mix Recipe Hacks

Gluten free cake mix has been made easily accessible in the past few years and can be found in the gluten free/baking isle of pretty much every grocery store from Whole Foods to Safeway.  Though these baking mixes are convenient because they save us from the pains of creating the perfect gf flour blends, the options are usually limited when it comes to flavors and varieties.  In this post I am going to share the ways I use the GF baking mixes to make my own specialized decadent treats.  

 

Recipe 1: Dump Cake

Dump cake has been one of my favorites ever since I first tried it at Girl Scout camp in the summer of 2008.  It has also become a staple recipe of our Rhode Island family reunions.  This GF Vegan dump cake adaptation requires no mixing and only 4 ingredients.  Though this recipe is by no means healthy, its delicious taste pleases everyone from elementary school Girl Scouts to grandparents.

The cake mix behind this recipe is the classic GF yellow cake mix

INGREDIENTS

1 Box of of GF yellow cake mix (I use Betty Crocker)

1 20 oz can Pineapple chunks in 100% juice

1 20 oz can sliced peaches in 100% juice

1 stick earth balance vegan butter

 

1.  Preheat oven to 350 degrees and grease a 9x13 baking dish

2. Dump both cans of fruit into the pan

3. Evenly pour the cake mix over the fruit (do not mix!)

4. Slice the "butter" into thin squares and cover the top of the cake (this may or may not take the whole stick, but you want to try to really cover it)

5. Bake for 30-45 minutes until the top is golden brown and the liquid is bubbling 

6.  Serve like a cobbler warm or cold! Goes great with ice cream :)

Though this cake might not have the best name or appearance, one bite will win you over 

 

Recipe 2: Vegan Banana Brownies

My family consumes about 25+ bananas a week so it can be hard to estimate just how many we actually need to buy.  A slight over estimate can lead to our fruit bowl housing a few mushy brown bananas that are longing to be used instead of just being tossed in the compost bin.  One of my favorite use for the bananas is using them as an egg replacement in my brownies. When I add bananas to brownies they are extra gooey and have a delicious flavor combination of banana and chocolate.

The star of the recipe is the GF brownie mix from Trader Joes

INGREDIENTS

1 box of GF chocolate chip brownie mix from Trader Joes

1/4 cup water

2 brown bananas mushed

1/4 cup flax meal

1/2 cup oil (I use coconut or canola)

Optional: Sprinkles!!

 

1. Preheat oven to 325 degrees, and grease a 8x8 glass baking dish

2. In a large mixing bowl wisk banana with flax meal and let sit for 5 minutes

3. Mix in oil and water

4. Add brownie mix and thoroughly mix (no clumps!!)

5. Evenly spread batter into the baking dish and add sprinkles

6. Bake for 50 minutes or until a tooth pick comes out clean
