Lentils are one of my favorite foods and they are a great protein source and are very filling. These red lentils are some of my favorites and they are from Trader Joes. They are so fun to make and I love to experiment with ways to prepare them, one time I even put diced apple in (they were delicious). In this post I will explain how I make my basic recipe! After a LOT of trial and error I think I have this lentil thing down.
You will need:
1 tablespoon Olive Oil
5 Cups Waters
2 cups of lentils
1/2 onion
1 can of tomatoes
Some spices!
Put 2 cups of lentils in a strainer and run water over them
Pour one tablespoon of olive oil in a medium saucepan and turn stove on medium heat. Toss 2 cups of lentils in the oil and coat them. Then add 5 cups water. Bring water to boil, reduce and cook for 15 minutes.
Add one can of tomatoes, 1/2 onion, sprinkle in chili powder, coriander, cayenne, curry powder and garlic (or any spices of your choice). Then cook for 5 more minutes on low heat.
Cool for 3 minutes, then serve I like to top with spinach, pressed garlic, or shredded carrots. I also love to serve lentils with french fries or rice!
